SAUTEED POTATOES WITH AJI
Ingredients :
˝ cup oil
1 large onion, finely chopped
1 garlic clove, finely chopped
Ají Amarillo fresco / fresh yellow ají (chili)
paste, to taste
1 teaspoon paprika
2 lb 4 oz (1 k) white potatoes, peeled, cooked and diced
ľ cup chicken bouillon
ľ cup fresh farm cheese, crumbled
3 tablespoons chopped parsley
˝ cup evaporated milk, approximately
Salt
Pepper
Preparation:
Heat oil in a heavy bottom saucepan and cook onion until golden. Add garlic, aji, paprika, salt and pepper and cook until tender.
Add potatoes and bouillon. Bring to a boil and cook for 3 to 4 minutes.Add cheese, parsley and milk.Serve with cooked white rice.
