BROILED ZUCCHINI
Ingredients :
3 small zucchinis, sliced
5 ½ oz (150 g) mushrooms, sliced
1 teaspoon low fat oil
2 tablespoons grated mozzarella cheese
1 garlic clove, finely minced
1 teaspoon marjoram
1 teaspoon parsley, finely minced
Salt
Pepper
Preparation:
Heat oil in skillet, add garlic, marjoram and parsley and stir.
Add mushrooms together with zucchini. Stir, cover skillet and cook for 20 minutes at moderate heat. Season with salt and pepper.
Place mixture in the bottom of a baking pan. Cover with shredded cheese and take pan to broil.
Serve immediately. Can be served with beef, poultry or fish.
