    SAUTEED ZUCCHINI IN AJI SAUCE     

   Ingredients :
 
6 zucchini
3 tablespoons oil
1 large onion, finely chopped
1 teaspoon ground garlic
5 tablespoons ají amarillo fresco / fresh yellow aji (chili) paste
1 teaspoon paprika
1 cup of bread soaked in milk and blended
Kernels from 2 corn ears
2 oz. (200 g) fresh white cheese, diced
1 cup fava beans, cooked
2 lb 4 oz (1 k) yellow flesh potato, cooked and halved
Salt
Pepper
Milk
Parsley, chopped

   Preparation:

Rinse zucchini y cut in thin slices. Place zucchini in a saucepan with water and bring to a boil for 3 minutes. Drain and set aside. Heat oil in a medium size skillet and sauté onion. Add garlic, aji, paprika. Cook until tender. Season to taste.

Stir in blended bread and cook for 10 minutes adding the sufficient milk to form a soft cream. Add zucchini and cheese. Boil a couple of minutes and add fava beans. Correct seasoning. Transfer to a serving dish and sprinkle with chopped parsley. Place corn and potatoes around zucchini. Serve with white rice.
