    GNOCCHI ROMAN STYLE     

   Ingredients :
 
2 cups water
5 ½ oz (150 g) semolina
3 ½ oz (100 g) bacon cut in small cubes
¼ cup butter
½ cup grated parmesan cheese
Salt
Pepper

Herb Butter:
½ cup butter
1 garlic clove, finely chopped
2 tablespoons chopped herbs (tarragon, marjoram, thyme, sage)
Salt
Pepper

   Preparation:

Brown bacon cubes in a skillet. Drain in paper towel. Reserve.

Bring salted water to a boil. Gradually, while boiling, add semolina stirring constantly. Add bacon and combine well. Remove from heat and pour preparation into a jelly roll pan. Spread mixture evenly ½ inch (1 cm) thick. Allow cooling.

With a 2 – 2 ½ -inch (4 – 5 cm) round cutter cut circles and carefully transfer them to a rectangular greased serving dish, overlapping them slightly. Sprinkle with parmesan cheese.

Herb Butter:
Melt butter in a skillet and add garlic and herbs. Combine well. Remove from heat and pour over gnocchi.

Bake in preheated oven 400 °F (200 °C) during 10 – 12 minutes until they are hot.

Serve immediately.
