    BEEF ROLLS     

   Ingredients :
 
1 lb (1/2 k) beef cut in 4 steaks
1 garlic clove, minced
½ cup ham, chopped
2 carrots, peeled and finely chopped
2 medium size onions, finely chopped
2 tablespoons tomato paste
1 ¼ cup beef stock
Salt
Pepper
1 teaspoons, herbs (tarragon, thyme, marjoram)
2 tablespoons parsley, finely chopped

   Preparation:

Pound steaks to make them thinner. Spread garlic and season.

Combine ham with ¼ of the carrot, onions, tomato paste, beef stock, salt, pepper and herbs. Mix well and spread this mixture on each of the steaks.

Roll beef and secure with twine or toothpicks.

Place remaining vegetables, tomato paste, beef stock and seasonings on a medium size pan. Place beef rolls and cover pan. Cook at low temperature until rolls and vegetables are tender.

Serve rolls with vegetables and sprinkle with chopped parsley.
