    LIGHT SWEET AND SOUR PORK     

   Ingredients :
 
1 lb 2 oz (500 g) pork loin, without fat, cut in medium pieces
1 tablespoon butter
4 medium onions sliced thinly sliced
2 cups beef stock
˝ cup canned pineapple, drained and cut in cubes
1 red pepper, seeded and cut in thin strips
1 tablespoon soy sauce
Salt
Pepper

   Preparation:

Melt butter in a medium size skillet and sauté pork meat until golden. Remove meat reserving fat. Place meat in a medium size pan.

Sauté onion in reserved fat and add to pork. Add stock and cook for 2 hours or until pork is very tender.

Half hour before serving, add pineapple, peppers and soy sauce. Season to taste.

Serve hot.
