    CILANTRO STUFFED CHICKEN BREASTS WITH YELLOW PEPPER SAUCE     

   Ingredients :
 
2 whole chicken breast, skinned and boned, cut in half
1 teaspoon vegetable oil
1 garlic clove finely chopped
3 tablespoons cilantro leaves, finely chopped
Salt

Yellow Pepper Sauce:
3 peppers ( yellow, if possible) skinned, seeded and deveined
2 garlic cloves, minced
1 cup onion, chopped
2 tablespoons vegetable oil
1 cup chicken broth, fat removed

   Preparation:

Lightly brush a baking pan with oil. Combine, in a small bowl, garlic with cilantro and salt.

Dry chicken breasts and trim fat. Put one chicken breast half on a cutting board. Insert a knife in the middle of 1 side of chicken breast through the center. Move knife back and forth in order to create a pocket. Do the same with remaining chicken breast halves.

Introduce ˝ tablespoon of cilantro mixture in each pocket and spread it evenly. Place chicken breasts in the baking pan and brush them with remaining oil. Season with salt and pepper.

Cook in preheated oven 400 °F (200 °C) until tender.

Yellow Pepper Sauce:
Sauté garlic and onion together in remaining oil in a non stick frying pan. Stir until tender. Add peppers and chicken broth. Bring to a boil and cook, stirring, for 3 minutes. Blend or process. Season.

Serve on top of chicken breasts.
