    LIGHT CHICKEN NEAPOLITAN STYLE     

   Ingredients :
 
7 oz (200 g) spinach, blanched and chopped
14 oz (400 g) chicken breast fillet or thigh, (7 oz/200g per serving)
7 oz (200 g) sliced mushrooms
6 tablespoons fresh tomato sauce
1 garlic clove, finely chopped
Olive oil
Salt
Pepper
3 ˝ oz (100 g) Mozzarella cheese, shredded

   Preparation:

Place chopped and blanched spinach on the bottom of a heatproof serving dish or 2 serving dishes. Brown chicken in a skillet and place over spinach.

Heat olive oil in a skillet and sauté garlic. Add mushrooms and cook. Stir in tomato sauce and season to taste.

Pour tomato mixture over chicken and sprinkle Mozzarella on top.

Bake in preheated oven 350°F (180°C) until chicken is tender and cheese melts.

Serve.
