    PURÉE SOUFFLÉ     

   Ingredients :
 
1 lb (½ k) yellow potato
1 lb (½ k) white potato
1 cup milk
1 cup heavy cream
½ cup butter
½ cup grated parmesan cheese
6 eggs
½ cup grated mozzarella cheese
Salt
Pepper
Nutmeg

   Preparation:

Cook potatoes in salted water. Force through a strainer while hot and place mashed potato in a pan. Heat stirring until potato dries.

Transfer mashed potato to a mixer and while beating, start pouring hot milk together with cream and butter. Add whipped yolks, salt, pepper, nutmeg and half of parmesan cheese.

Remove from mixer. Whip whites until stiff and fold into potato mixture.

Fill a greased mold with half of this preparation, cover with half of mozzarella cheese. Fill with rest of preparation and sprinkle mozzarella and parmesan cheese on top. Dot with butter. Bake in preheated oven 350° F (175° C), for 25 to 30 minutes.

Serve.
