GAZPACHO SALAD
Ingredients :
3 cups tomatoes, seedless, diced
1 cup cucumber, peeled and diced
1 cup green pepper, seeded and deveined, diced
¼ cup red onion, chopped
¼ cup green onion, chopped (white and green part)
2 tablespoons basil leaves, finely chopped
2 ½ tablespoons red wine vinegar
1 teaspoon olive oil
1 teaspoon Dijon mustard
Pinch of salt
Pepper
2 garlic cloves, finely minced
Preparation:
Combine tomatoes, cucumbers, green onions green peppers, and red onion in a bowl.
Set aside. Combine basil leaves with vinegar, oil mustard, salt, pepper and garlic and whisk until mixed. Pour vinaigrette over tomato mixture. Cover and refrigerate for 1 hour.
