FISH FILLETS WITH VEGETABLES
Ingredients :
1 cup leek, white part only, cut in thin julienne
1 cup carrot, peeled and cut in thin julienne
1 cup snow peas, cut in thin julienne
1 cup spinach leaves, cut in thin julienne
1 tablespoon chopped cilantro leaves
Salt
Pepper
4 fish fillets, pin bones removed
1 orange, cut into wedges, pith and white membrane removed
1 tablespoon dry white wine
Preparation:
Combine leek with carrot, spinach and snow peas. Place vegetables on the bottom of a lightly buttered microwave safe glass mold. Season with salt, pepper and sprinkle chopped cilantro leaves. Arrange seasoned fish fillets on top and cover with the orange wedges.
Sprinkle with wine and cover mold with parchment paper or plastic film.
Microwave at high temperature (100%) for 10 minutes or until fish is cooked. Remove from oven and serve.
