    CHICKEN BROCHETTES IN HOISIN SAUCE     

   Ingredients :
  Marinade:
4 tablespoons oil
1 teaspoon sesame oil *
2 garlic clove, crushed
1 tablespoon fresh ginger, shredded
1 tablespoon sweet chili sauce *
Juice of 1 lemon
6 tablespoons Hoisin sauce *
3 – 4 tablespoons soy sauce
3 tablespoons brown sugar
4 green onions, chopped (white and green part)
¼ cup water
Salt
These products can be found in oriental food stores or in supermarkets.

Brochettes:
6 chicken breasts fillets (3 whole chicken breasts), skinless and boned
Salt
Pepper
Onion, peeled and cut in 1 ½ -2 inch (3-4 cm) pieces
1 red pepper, seeded and deveined, cut in 1 ½ - 2 inch (3 – 4 cm) pieces
1 yellow pepper, seeded and deveined, cut in 1 ½ - 2 inch (3 – 4 cm) pieces
1 green pepper, seeded and deveined, cut in 1 ½ - 2 inch (3 – 4 cm) pieces
Mushrooms, medium size
6 – 8 skewers, soaked in water for 30 minutes

   Preparation:
Marinade:
Combine all ingredients and pour mixture over chicken.

Brochettes:
Halve each chicken fillet, lengthwise. Cut each half in 3 pieces, season with salt and pepper, and place them in a bowl with marinade. Cover with plastic film and refrigerate for 2 – 3 hours.

Thread 1 chicken piece onto skewer; continue with a piece of onion, chicken, red and green pepper, chicken, mushroom and finish with a piece of chicken. Repeat with the remaining skewers.

Place skewers over hot grill and brush remaining marinade several times. Turn skewers 1 or 2 times until tender and browned.
Serve.
