Rinse and dry lettuce. Hand cut in big pieces. Place in a salad bowl.
Melt sugar and butter with chopped pecans to caramelize. Once caramelized, transfer to a greased surface to dry.
Mix lettuce with crumbled Roquefort cheese, figs and pecans.
Decorate with figs and a few caramelized pecans.
Dressing: Mix all dressing ingredients and pour over salad just before serving.
